Everyone Looks Forward to Taco Tuesday!

This recipe makes for a simple taco that is a great choice for kids. Set up a taco bar with extra toppings for a delicious dinner that will have everyone going back for more!

Easy Picadillo Tacos

Serves 10


2 teaspoons
vegetable oil
½ large
white onion, finely chopped
1 pound
ground beef or ground chuck
3 cloves
minced garlic
1 teaspoon
ancho chili powder
1 ½ teaspoons
¾ teaspoon
ground cumin
1 teaspoon
dried oregano
Roma tomatoes, coarsely chopped
1 teaspoon
coarse salt
1 teaspoon
freshly ground pepper
1 ½ cups
2 teaspoons
white vinegar, optional
Packaged taco shells
Shredded iceberg lettuce, for topping
Chopped tomatoes, for topping
Shredded mild cheddar cheese, for topping
Prepared salsa

Additional Taco Toppings

Chopped onion
Sliced, pickled jalapenos
Chopped cilantro
Sour cream


Place the oil in a large skillet and heat over medium-high heat. Add onion to skillet; cook for 3 to 4 minutes until it starts to turn translucent. Add ground beef to skillet; cook and stir, breaking up the ground beef with the back of a spoon, until browned. Remove all but 1 tablespoon of the fat from the skillet. Add garlic, chili powder, paprika, cumin, oregano, tomatoes, salt, and black pepper to skillet; stir to combine. Add water to skillet, bring to a boil. Reduce heat, simmer for about 20 minutes or until the mixture has thickened and there is very little liquid remaining. Add vinegar to skillet; stir. Assemble tacos by spooning the picadillo beef filling into all of the taco shells. Garnish with lettuce, tomatoes, cheese, and salsa. And additional toppings, if desired.
