Apple Rings Are a Perfect Fall Treat

Cinnamon-Sugar Apple Rings

Ingredients

1 tablespoon
lemon juice
1 cup
Fuji apple rings (from 2-4 Fuji apples, depending on size of apples)
1 ½ cups
all-purpose flour
1 ½ teaspoons
baking powder
1 teaspoon
cinnamon
¼ cup
white sugar
¾ teaspoon
salt
¼ cup
buttermilk
¼ cup
soda water
1 cup
powdered sugar
2 cups
canola oil (for frying)
½ teaspoon
cinnamon, for cinnamon-sugar garnish
½ cup
powdered sugar, for cinnamon-sugar garnish
Vanilla ice cream, for serving

Directions

Place lemon juice in a bowl. To make the apple rings, peel and core the apples, then slice width-wise so that the slices look like flat circles with a hole in the center. Add the apple rings to the bowl with the lemon juice; toss to coat.

To make the batter, place 1 cup of the flour in a mixing bowl. Add baking powder, cinnamon, sugar and salt to the flour; mix to combine. Add buttermilk and soda water to dry ingredients; stir until just combined.

In another bowl, combine the remaining ½ cup of flour with powdered sugar. Place apple rings in the flour-powdered sugar mixture; toss to coat.

Pour the 2 cups canola oil into a 1 ½ inch deep skillet. Heat the oil over medium high or until it reaches 350 degrees F.

While the canola oil is heating, make the cinnamon-sugar. Place the ½ teaspoon cinnamon and ½ cup powdered sugar in a small bowl; mix together, then set aside.

Dip the apples slices, one-by-one, in the batter, then carefully add the apple slices into the hot oil. Cook the apple slices for about 1-2 minutes or until browned. Carefully turn the apple rings over and cook for another 1-2 minutes or until browned. Transfer the apple rings to a paper towel-lined plate. Sprinkle the fried apple rings with the cinnamon-sugar. Serve with vanilla ice cream.
